How a raw cake is made (no oven required)
Soaked cashews, a blender, a fridge and patience. Here is what happens before a slice reaches your plate.

A raw cake is never baked. Instead of flour, eggs and an oven, it is built from nuts, fruit and natural fats, then set in the fridge or freezer.
The base
Most bases start with dates and nuts blended into a soft, slightly sticky crumb. Pressed into a tin, it holds the cake together and gives it a chewy bite.
The cream
The creamy layers are usually made from cashews soaked overnight, blended until completely smooth with coconut oil, fruit, cacao or coffee. This is where the flavour lives.
The waiting
Each layer is chilled before the next one goes on. That is why a raw cake needs a few days’ notice: the layers need time to set so every slice comes out clean.
